Italian Lemon Vinaigrette

- 4 T red wine vinegar
- 1 clove garlic minced
- 4 T soy milk / plant milk
- 2 T liquid from roasted red peppers jar
- 2 t Dijon mustard
- 1 T fat free vegan mayo
- 1 teaspoon date syrup / other liquid sweetener
- Pinch of salt
- 1 teaspoon dried oregano
- Fresh lemon zest from one lemon
- Grate or mince the garlic and put in a small glass jar.
- Add the vinegar and leave to steep for 10 minutes
- Add the other ingredients and shake well. The lemon and herb flavour will develop ad become stronger over several hours.
